5:00 PM Live Cooking Class with Chef Kathy Watson

Cook your family’s dinner by participating in a live cooking class with Kathy Watson. In your home kitchen you will gather the ingredients for a Spring Lettuce and Noodle Wrap with Peanut Sauce, and then go on-line through Zoom, where Kathy will demonstrate from her own home kitchen. We’ll all cook together, and at the end of an hour, you’ll have dinner ready for your family.

The instruction will be focused on cooking sustainably, with the seasons, and in a way that has less impact on our environment. This class will be appropriate for vegetarians, with options for those who eat meat, and can be adapted for gluten-free diets. Your family’s dinner should be on the table by 6pm.

NOTE: This is your ingredient list. Please have all these ingredients at hand, on your kitchen counter, at 5 p.m. when the class starts. Class will include instructions about how to prepare all these ingredients.

Thai Lettuce and Noodle Wraps

Serves 4

Greens, one of the following: 1 head red lettuce, 1 head bibb lettuce, 1 head napa cabbage2 cups loose herb leaves: cilantro, mint, basil, or a combination of any of these

1 package dry or fresh noodles: thin rice stick noodles (GF), buckwheat noodles, spaghetti, chinese noodles

Protein, one of the following:  ½ lb fresh raw ground pork, 2 cups leftover roast pork, beef, steak or chicken, 12 ounces tofu, 2 cups roasted, cubed butternut squash, 2 cups cooked garbanzo beans

1 cucumber

4-inch piece of daikon radish OR 1 bunch red radishes

1 bunch green onions

1-2 carrots

Please have one of the following: 1 cup bean sprouts, 1 cup snow peas, 1 cup fresh pineapple pieces, 1 cup shredded raw brussels sprouts, 1 cup thinly sliced broccoli or broccoli raab.

Sesame oil and sesame seeds

Peanut Sauce

1 cup natural unsweetened peanut butter
4 tablespoons soy sauce
2 tablespoon fish sauce (optional if you don’t have)
2 tablespoon rice vinegar
4 tablespoons brown sugar
1 tablespoon chili garlic sauce, OR sirachi, OR hot sauce such as Tabasco
2 tablespoon fresh lime juice
4 cloves garlic, minced
¼ cup coconut milk
